Ingredients

To Peru 

  • 1 Seasoned Turkey;
  • 1 apple;
  • Margarine as much as necessary;
  • String as much as necessary.

For the rice

  • 2 tablespoons of margarine;
  • 1/2 chopped onion;
  • 2 cloves of minced garlic;
  • 1 cup of parboiled rice;
  • 2 cups of boiling water;
  • Salt to taste;
  • 100g of chopped bacon pieces;
  • 2/3 cup sliced almonds;
  • 1/3 cup chopped dried apricots;
  • Chopped parsley leaves to taste.

Preparing the Turkey

  1. Defrosting the Seara Seasoned Turkey
    The first step is to defrost the Peru according to package directions. If your turkey is frozen, it is essential to thaw it beforehand to ensure that the seasoning spreads evenly and the meat is tender. This step can take a few hours, so plan ahead.
  2. Preheat the oven
    While the turkey is thawing, preheat the oven to 180ºC. This is important to ensure that the bird cooks evenly and that the heat reaches all corners of the meat, leaving it golden and juicy.
  3. Stuff the turkey and prepare to roast
    Place the defrosted turkey in a baking dish and stuff the inside of the bird with litter. The apple will help keep moisture inside the turkey while roasting, resulting in juicier meat. Then, tie the turkey legs with cooking twine to ensure that the bird remains compact while roasting.
  4. Brush the bird with margarine
    Brush the entire turkey with Margarine, covering the meat well. The margarine will give the meat a delicious flavor and help it brown more. After applying the margarine, protect the thigh and wing tips with aluminum foil to prevent them from burning during the roasting process.
  5. Cover and roast the turkey
    Cover the entire turkey with aluminum foil, leaving the meat thermometer out. Place the baking sheet in the preheated oven and roast the turkey for 2:30 am, or until the thermometer pops up, indicating that the turkey is done. When the thermometer pops up, remove the foil and return the turkey to the oven for another 40 minutes so that it browns on the outside, acquiring an irresistible golden color.

Preparing Christmas Rice

  1. Sauté the onion and garlic
    While the turkey is roasting, start preparing the Christmas rice. In a saucepan over medium heat, melt the Margarine. Add the chopped onion and sauté until it becomes translucent, which should take about 3 minutes. Then add the chopped garlic and sauté for another 1 minute, until golden brown and fragrant.
  2. Cook the rice
    Add the salt and the boiling water Add the water to the pan and cook over medium heat until the water reaches the height of the rice. After that, reduce the heat to low, leaving the lid of the pan half open. Cook until the water has completely evaporated, which should take about 10-15 minutes. Cover the pan and let it sit for another 10 minutes so that the rice can finish steaming.
  3. Prepare the rice mixture with bacon and almonds
    While the rice is resting, in a frying pan over medium heat, fry the Seara Bacon Chunks chopped until it is golden and crispy, which takes about 5 minutes. Then add the flaked almonds and fry for more 2 minutes. Join the apricots chopped and fry for another 2 minutes, stirring well so that all the ingredients mix. Remove from the heat and transfer to a bowl.
  4. Mix the rice and finish the dish
    After resting, fluff the rice with a fork. Transfer the rice to the bowl with the bacon, almonds and apricots and mix gently. Sprinkle with a little parsley chopped on top to add a touch of freshness and color. Serve immediately, accompanied by the Seasoned Turkey roast.
