Ingredients:
1 packet of cornstarch biscuits (200g)
Whiskey Cream:
2 cups of milk, 5 strained egg yolks, 1 can of condensed milk, 1 tablespoon of cornstarch, 1/3 cup of whiskey;
Nut cream:
1 can of condensed milk, 1 cup (tea) of milk, 1 tablespoon (soup) of cornstarch, 1 sifted egg yolk, 1 and 1/2 cups (tea) of chopped nuts, 1/2 cup (tea) of cream;
Syrup:
1 and 1/2 cups (tea) of milk, 1/3 cup (tea) of whiskey, 3 tablespoons (soup) of sugar;
Praline:
1 cup (tea) of sugar, 1/2 cup (tea) of water, 1 and 1/2 cups (tea) of chopped nuts, Butter for greasing.
Preparation method:
For the praline, mix the sugar and water and cook over medium heat until a golden caramel forms. Remove from heat, stir in the walnuts and spread over a greased surface. Let cool. For the whiskey cream, mix the ingredients and cook over low heat, stirring with a hand whisk until thickened. Let cool. For the walnut cream, mix the condensed milk, milk, cornstarch and egg yolk. Cook over low heat, stirring until thickened. Add the walnuts and cream and let cool. Separately, mix the ingredients for the syrup. In a 22cm diameter springform pan, make a layer with half of the whiskey cream, a layer with the biscuits soaked in the syrup, a layer with the walnut cream and another layer with the soaked biscuits. Finish with the whiskey cream and refrigerate for 4 hours. Unmold. Place the cold praline in a plastic bag. Using a rolling pin, crush the praline into smaller pieces. Cover the entire pavé with the praline and serve immediately.

1/2 cup (tea) of light cream or unsweetened Greek yogurt (replacing traditional cream)
Healthy syrup:
1 and 1/2 cup (tea) of skimmed milk
1/3 cup (tea) of whiskey (or vanilla essence)
2 tablespoons coconut sugar or natural sweetener
Healthy Praline:
1/2 cup (tea) of coconut sugar
1/4 cup (tea) of water
1 and 1/2 cups (tea) of chopped walnuts
1 teaspoon coconut oil for greasing
Preparation method:

In a saucepan, combine the coconut sugar and water. Heat over medium heat and stir until a golden caramel forms. Remove from heat, add the chopped nuts and stir well. Pour onto a surface greased with coconut oil and let cool. Once cool, crush the caramelized nuts with a rolling pin or place in a plastic bag and pound with a meat mallet to form smaller pieces.
Light whiskey cream:
In a saucepan, mix the skim milk, egg yolks, light condensed milk and cornstarch. Cook over low heat, stirring with a hand whisk until thickened. Remove from heat, add whiskey or vanilla essence and let cool.

Add a layer of walnut cream and, again, a layer of soaked biscuits. Finish with the whiskey cream. Cover with plastic wrap and refrigerate for at least 4 hours to set.
