Mini Bologna Rolled Pizza

Ingredients

  • 1 tablespoon of sugar
  • 30 g fresh yeast
  • 1 cup warm milk
  • 1 teaspoon of salt
  • ¼ cup oil
  • 1 whole egg
  • 4 cups of wheat flour
  • 360 g of Italian Mortadella with Marba Olives sliced
  • 100 g tomato sauce
  • 2 beaten eggs
  • 2 tablespoons grated parmesan cheese
  • ¼ cup chopped parsley

Preparation method

  1. Dissolve the yeast and sugar in a bowl. Knead until the mixture becomes liquid;
  2. Add the milk, salt, oil and whole egg. Stir until the ingredients are incorporated;
  3. Add the flour and start working the dough until it forms a compact ball. Then, knead the dough until it is soft and smooth;
  4. Divide the dough into two parts;
  5. Cover with plastic and a clean dish towel;
  6. Let it rest and ferment for 30 minutes;
  7. Roll out the dough, using a rolling pin, to a thickness of 1.5 cm;
  8. Cut into 15cm x 15cm squares;
  9. Spread 1 level spoonful of tomato sauce in the center of 1 square of dough;
  10. Place some slices of Italian Mortadella with Marba Olives;
  11. Close the square, join opposite ends and brush the edges thinly with beaten eggs to secure;
  12. Brush beaten eggs on top of each mini pizza and garnish with Parmesan cheese and parsley;
  13. Repeat the process until you have finished the dough squares;
  14. Heat the oven to 180°C;
  15. Bake the mini pizzas on non-stick baking sheets for approximately 18 minutes or until golden brown.
