Ingredients

  • 1 package of Shredded Chicken Breast;
  • 2 tablespoons of margarine;
  • 1 drizzle of olive oil;
  • 1 onion;
  • Salt to taste;
  • Black pepper to taste;
  • 1 can of drained corn;
  • 1 can of cream;
  • 200g of creamy cottage cheese;
  • 200g of mozzarella;
  • Potato straws to taste.

Preparation method: How to make Chicken Fricassee

Step 1: Preparing the ingredients

Start by finely chopping the onion and set aside. This will ensure that it breaks down well during the sautéing process and mixes easily with the other ingredients.
Then, grate the mozzarella on a coarse grater, as it will cover the fricassee and brown evenly, creating a golden and tasty layer on top.

Step 2: Sautéing the chicken

Heat a frying pan over medium heat and add the unsalted Doriana Margarine, followed by a drizzle of olive oil. When the margarine has melted, add the chopped onion and sauté for about 2 minutes, until it is soft and lightly golden.
Now, add the Seara Shredded Chicken Breast, salt and black pepper to taste. Sauté everything for another 5 minutes, stirring occasionally, until the chicken is well incorporated with the seasonings and lightly browned. Once ready, set the sautéed chicken aside.

Step 3: Preparing the corn cream

Preheat the oven to 200ºC, so that it is already very hot when the fricassee is placed in it.
In a blender, add the drained corn, cream, cream cheese, salt and black pepper. Blend everything until you get a smooth, even cream, without any lumps of corn. This cream will give the fricassee its characteristic creaminess.

Step 4: Assembling the fricassee

Now, add the corn cream to the sautéed chicken that you had set aside. Mix well so that the chicken absorbs all the flavor of the cream.
Transfer the mixture to an ovenproof dish, spreading it evenly. This layer of chicken and creamed corn will be the base of your fricassee.

Step 5: Finishing and browning

Spread the grated mozzarella over the corn and chicken cream, covering the entire surface.
Place the baking dish in the preheated oven and bake for about 20 minutes, or until the cheese has gratinated and formed a delicious golden crust. The gratinating time may vary depending on your oven, so keep an eye on how cooked the cheese is.

Step 6: Serving

Remove the chicken fricassee from the oven and, while still hot, sprinkle the straw potatoes on top, giving the dish a crunchy touch. Serve immediately and enjoy this tasty and comforting meal!

This recipe is perfect for a quick lunch or even a special dinner with the family.
